There’s nothing quite like a perfectly crispy breakfast potato at your favorite brunch spot. YUM! These days we find ourselves craving my quick and easy crispy roasted breakfast potatoes recipe to bring that brunch like meal right to our own kitchen. I have to admit, we actually crave these potatoes for breakfast, lunch, and dinner! When it comes to crispy breakfast potatoes, I like mine full of flavor so I like to be generous in the spice department.
These oven roasted potatoes are super simple to season and pop into the oven in no time. They will have your kitchen smelling like toasted spices in no time! Trust me, you’ll want these all week long!
Red Onion – I like to use only half the onion and dice it into small pieces.
EVOO – When roasting potatoes it’s important to be very generous with the extra virgin olive oil. It’s important the potatoes are evenly coated.
Spices – As usual I love to make this recipe bold and flavorful, so I am heavy handed with the spices, YUM! You’ll need: Smoked Paprika, Garlic powder, Onion powder, Red Pepper Flakes (optional)
Salt and Pepper – a good pinch or 2 of kosher salt and a few cracks of fresh cracked pepper always does the trick!
How to make this Easy Crispy Roasted Breakfast Potato Recipe
1. Prep that oven and baking sheet
Preheat your oven to 425 degrees F and line your baking sheet with parchment paper.
2. Combine ingredients in a bowl
Add your potatoes, EVOO, spices, salt and pepper into a large bowl and toss well with your hands or spatula to evenly coat the potatoes.
3. Spread, bake, and bake once more
Pour the potatoes onto your baking sheet and spread them out evenly (see photo). Bake for 20 minutes, then remove from the oven and toss potatoes with a spatula, turn oven down to 400 degrees F, then bake for an additional 7-10 minutes.
4. Serve these crispy roasted potatoes hot!
Garnish with roughly chopped parsley or herb of your choice. Salt to taste.
You can serve as they are straight from the baking sheet!
Tips and Tricks
Wash your potatoes
There is no peeling the potato skins in this recipe! Remember that potatoes are grown in the soil and the skins can have dirt, bacteria and other grocery store grime on them. So give a good rinse, wipe down, and dry thoroughly!
Combine in a bowl!
I don’t recommend mixing on the parchment paper here. It is crucial to combine all the ingredients in a bowl to evenly coat when going for a perfectly crispy breakfast potato. Yes, it does dirty an extra dish, but trust me, it’s worth the extra 30 seconds it takes to clean that bowl 😉
Spacing is Key!
Try not to overcrowd that baking sheet! Even spacing is key. If you have a smaller baking sheet, roast two separate batches.
Toss half way through
Try not to skip this step. Pulling the potatoes out of the oven halfway through the roasting process allows them to get extra crispy!
FAQ
Can I make these ahead of time?
Absolutely! There are a few different ways to make ahead:
Prep the potatoes, combine EVOO and spices, and toss to coat the potatoes evenly. Then store in an airtight container in the fridge for up to 3 days.
Reheat previously roasted potatoes in the oven at 400 degrees for 10 minutes.
Reheat in the microwave, however, you will lose some of the crispiness that makes this potato recipe so delicious.
Do I have to chop the potatoes?
You can prepare the potatoes however you wish! I like to usually quarter mine, but you can half them as well. Cook time may vary slightly.

Store your crispy oven roasted potatoes in an airtight container in your refrigerator for 3-4 days.

As soon as the weather turns cloudy, wet, and chilly, I start to crave that classic red and creamy tomato basil soup. Nothing screams childhood nostalgia quite like some roasted cherry tomato soup and hot gooey grilled cheese sandwiches (I’ll share my mom’s famous grilled cheese sandwiches soon).
Now that I spend most of my time in the kitchen creating new recipes for my family, I figured it was time to create a healthy and easy version of that creamy and chunky roasted tomato soup that I hold so near and dear to my heart.
So, what’s in this Easy Roasted Cherry Tomato Soup?
Cherry Tomatoes – You’ll need 2 pints of these. I prefer to use these sweet and juicy tomatoes because they add a little tartness to the soup.
Garlic – This recipe calls for a whole head of garlic. YUM! There’s nothing better than walking into your kitchen and smelling delicious oven roasted garlic.
Basil – Go for fresh basil. Basil pairs well with tomatoes because of it’s subtle sweetness and it really cuts through the tomatoes’ acidity, an ultimate pairing for tomato soup.
EVOO – I love using a good quality organic extra virgin olive oil in this recipe.
Yellow onion – Let’s be honest, this is a simple soup, but adding caramelized onion elevates this dish from average to fancy real quick
Crushed red pepper flakes – Just a 1/2 teaspoon really adds a little kick to the soup.
Coconut cream – I believe the soup is better with coconut cream, because the cream has a higher fat content than coconut milk. The fat creates that creamy tomato soup consistency we are aiming for. If you can’t find coconut cream at your local grocery store, grab full fat coconut milk and see my tips and tricks section below to learn how to extract the cream.
Chicken bone broth – Usually, I opt for bone broth to increase the amount of nutrients and protein in my soup. It’s easy to switch out the chicken for a veggie broth to keep this soup vegan.
Parmesan cheese – Yum! The perfect cheese to garnish your delicious tomato soup. If you are keeping this Whole30 or vegan, just omit the cheese.
How easy is this homemade soup?
When I say easy cherry tomato soup I mean it.
Peel your garlic and cut all your tomatoes in half. Then throw them on a baking pan that has a small lip and is lined with parchment paper. Toss with a generous amount of EVOO, salt, and pepper and pop those bad boys in a 400°F preheated oven for 20-25 min.
Slice up that yellow onion and add it to a large pot or Dutch oven with EVOO and caramelize: takes about 25 min on medium heat. Don’t forget to take a second to really smell all of the wonderful aromas you’re creating.
When you are done caramelizing that onion, stir in the red pepper flakes for 2 min to spice it up a bit.
**If you are using a vitamix or food processor to blend your soup, add carmelized onions to the blender. The tomatoes and garlic will get added to the blender when ready.
Next, you’ll add in your chicken bone broth (or veggie broth if keeping it vegan/vegetarian) and coconut cream to the pot with the caramelized onions and warm.
By this point, your tomatoes and garlic should be done roasting in the oven, add them to the soup pot if you are using an immersion blender and blend away, but stop just before the consistency you want. Then add in the basil and blend until your desired creamy and chunky texture is achieved. I like to keep my soup chucky, I think having a bit of texture really screams gourmet.
And that’s it! Easy, simple, quick, healthy, and homemade!
Tips and Tricks
1. Can’t find coconut cream?
No problem, take your can of full fat coconut milk (be sure not to shake it or turn it upside down) and place it in the refrigerator. This will allow the coconut milk fat (coconut cream) to separate and solidify at the top. Once chilled, open your can (don’t shake it!), and scoop that delicious coconut cream off the top.
2. Perfectly caramelized onions.
Be sure to use a yellow onion, they let off that unmistakable sweet flavor when caramelized. Thinly slice your yellow onion. Heat your EVOO over medium heat before adding the onions to the pot. Once you add your onions, continue to stir until they become translucent. Once translucent add a pinch of salt and lower the flame to medium-low for about 25 min, occasionally stirring to prevent onions from sticking. If you notice the pan starting to burn in places, add a tablespoon of water and stir.
Storage info
You can store your easy roasted cherry tomato soup in an airtight container in your refrigerator for 3-4 days. Or, you can freeze leftovers in a freezer friendly bag or container for up to 3 months. If you are placing leftovers in the fridge or freezer, let the soup cool before storing.
FAQ
Do I have to use cherry tomatoes?
No! Try using roma or plum tomatoes too. You’re the boss.
Do I have to cut my tomatoes in half?
Absolutely not! Save on time and throw your tomatoes on the baking sheet whole, you may need to bake the tomatoes for slightly longer though.
Should I remove the skins of the tomatoes?
I prefer to leave the skins on and the seeds in my tomatoes, but it really comes down to preference.
What should I serve with my Easy Roasted Cherry Tomato Soup?

Instructions
Roasting the cherry tomatoes
Preheat oven to 400°F. Line baking tray (that has a lip) with parchment paper. Place the halved cherry tomatoes (2 pints) and peeled garlic (1 head) onto baking tray – drizzle with EVOO (1-2 tbsp) and season with kosher salt and pepper (be fairly generous). Bake for 20-25 min.
Caramelize your onions while tomatoes are roasting
Over medium heat, add EVOO (2 tbsp) and thinly sliced yellow onion to a large pot or dutch oven and continuously stir. Once translucent add 2-3 pinches of kosher salt and lower the flame to medium-low for about 25 min. Occasionally stir to prevent onions from sticking. If you notice the pan starting to burn in places, add a tablespoon of water and stir.
Once onions are a deep golden brown stir in crushed red pepper flakes (½ tsp). **If you are using a vitamix or food processor to blend your soup, add carmelized onions to the blender. Then add tomatoes, garlic and basil to the blender and blend to desired consistency. You'll then add this mixture to the soup base.
For the soup base
Add chicken bone broth (1½-2 cups) and coconut cream (½ cup) to the carmelized onions, stir to combine and warm over medium heat.
When tomatoes are done roasting, carefully combine them with the soup base.
Use an immersion blender and blend until you have almost achieved desired consistency.
Add in fresh basil (½ cup loosely packed), and blend until desired consistency.

I have never met someone that doesnt like my quiche. I hold my quiche recipes near and dear to my heart. I’ve decided it is time for me to start sharing them with you, so you can enjoy them from the comfort of your home as well!
Don’t be intimidated by the number of steps in the recipe. I have outlined absolutely EVERYTHING you need to do, and in what order you should do it to help minimize the time spent making this BOMB breakfast, or brunch.
I find that showing you pictures and outlining the exact steps helps with confusion when making a quiche. But, as always, do whatever is best and easiest for you. For example, I personally like to bake my bacon rather than cook it on the stove.
I find that when I cook my bacon in the oven on parchment paper, it frees up more space and allows me to focus more on chopping additional veggies for the saute steps.
Making quiche is relatively easy, I find that the step that is usually overlooked is the very first step, THAWING THE DOUGH! I can’t tell you how many times I have forgotten to take the dough out of the freezer the night before. Or, I miraculously remember the night before to thaw in the fridge, but forget to take the dough out 45 minutes prior to handling it. If you forget, don’t fret, it is not the end of the world, your quiche will still turn out amazing, your dough will just be a little more stubborn when trying to line it in the pie dish.
All the prep work pays off when you are ready to load up that delicious baked quiche shell. To cut down on the mess when loading the quiche shells, I like to put all the ingredients close together to make loading the shells easy and quick.
I highly suggest following the tips I have outlined below when loading the quiche, it makes for a nice and even distribution of the bacon, veggies, cheese and eggs.
Since this quiche is easy to reheat, and still tastes as good on day 2, or 3 (if it lasts that long), this recipe is so great for making ahead on a meal prep day, you’ll have a hearty and protein filled breakfast ready to go. Also it will cuts down on my morning dishes so I spend less time at the sink doing dishes. Although, ever since i got this new anti-fatigue kitchen mat, I don’t mind standing at the sink.
This is also one of my go to recipes for new mamas. A quiche is so easy to transport in the car, reheats quickly, and can be eaten at ANY time of the day, or night. Perfect!

Instructions
Pie shells should be taken from the freezer and put in the fridge to thaw overnight, or removed from freezer 1.5 hrs before handling. Follow packaging instructions.
Remove pie shells from the fridge 45 minutes prior to handling, follow packaging instructions.
Preheat the oven to 400°F.
Line a baking sheet with parchment paper and evenly space bacon on the baking sheet, be sure the bacon is lying flat and not overlapping. Put bacon in the 425°F oven for 10-15 minutes. You want the bacon to be crispy.
Chop: 3 bell peppers, ½ of one onion, 1 cup mushrooms. If you want to add some spice, partially de-seed and dice the 1 jalapeno (optional).
In a large pan, add EVOO (1 tbsp) over medium high heat. Add the onion and bell peppers and saute for 3-4 min, season with kosher salt (1 tsp) and freshly cracked pepper (½ tsp). Then add the roughly chopped mushroom, garlic powder (½ tsp), smoked paprika (1 tsp), saute until mushrooms and peppers are soft. Remove pan from heat and set aside.
Remove bacon from oven and let cool.
Preheat oven to 425°F.
Line the pie pans with the thawed and pliable pie dough and make slits in the dough. Evenly sprinkle 1 tsp of the dried oregano into each pie shell (2 tsp total). Place the pie shells in newly preheated oven (425°F) and bake per package recommendations, about 15 min, or until edges are just starting to get lightly golden brown. TIP: I liked to place my pies on 1 large baking sheet, to easily remove pies from the oven without damaging the crust.
Chop the spinach (2 cups) and set aside.
Remove bacon from the baking sheet and pat excess grease. Roughly chop the bacon and set aside.
Crack 14 eggs into a large bowl, add kosher salt (1 tsp) and freshly cracked pepper (1 tsp). Whisk eggs until smooth and uniform.
Remove pie shells from the oven and let cool for about 5 minutes.
Preheat oven to 375°F.
Assembly: layer pepper mixture, spinach, cheese, bacon, pepper mixture, spinach, cheese and bacon. This allows for even distribution of all the ingredients.
Slowly add the eggs to each fully loaded pie pan. TIP: use a fork to make a little crater in the very center of the pie, gently mix the eggs into the ingredients, and repeat in several areas until the pie pan is filled with egg.
Repeat for the second quiche.
TIP: I find that typically it takes about 7-8 eggs to fill each pie pan, so I like to start with the 14 eggs, and if I end up needing more egg to add to the mixture, I crack a few more eggs, whisk and add.
Place the pie pans that are still on the large baking sheets in the oven for about 40 minutes, or until internal temp is 165°F.
